Housed in the hotel's Derby Room, the room pairs exposed brick and contemporary artwork with a menu its owners describe as locally rooted but globally influenced -- seasonally driven, locally sourced ingredients given a creative twist on comfort food. The kitchen serves lunch and dinner through the week plus a Sunday brunch, alongside small plates, handcrafted cocktails and mocktails, and house-made desserts. Happy hour runs weekday and Saturday afternoons, and the restaurant doubles as the on-site dining room for guests of the hotel's 45 themed suites.
